Cauldron tofu is very good but needs to be drained well and I like to wrap it in a towel and press it for a few hours to dry it out. My daughters don't bother pressing it. It doesn't matter much what stage you add it to the curry for it doesn't need cooking.

Agree, that Cauldron one is decently firm and holds up well to cooking.

Depends what you want it for?

Silken tofu is amazing for mousses and scrambled tofu due to its sloppy nature.

Then more firm tofu for stir fries, curries etc.

Cauldron is your mass produced crap, my opinion.

Taifun do far the best in my opinion. Their almond and sesame is to die for. They also do an excellent firm fermented version. Clearspring for silken then.

From your local vegan shop obviously 😉

Oh I have silken tofu in was planning on making a desert with it but I've tried scrambled tofu and wasn't impressed as I felt it was quite dry do will try it for that.
I'm making a Thai green curry. Will use the cauldron for now as I have it in but will look out for the one you mention 🙂

I should have said that Tempeh is always going to be a healthier meat substitute too although the fermented tofu I mentioned is ok.

Last night's dinner:

I also added a couple of cloves of garlic, and a tsp of sweet smoked paprika.

We served them in pita breads, with this mayo:

i VERY much encourage to you try this if you like mayo. It's honestly amazing.

We had salad and stuff too, but those were the things I made!
The kids weren't fans of the burgers, but liked the mayo.

The adults (Nightjar, Silvershadow, Binks & I) rated it the favourite of the vegan meals I've done so far this year (we're only on three: peach and chickpea curry, mushroom rogan josh, and carrot and kidney bean burgers). I do feel like I'm stuck in a bit of a Jack Monroe rut, but her recipes are easy and straightforward. And mostly kid friendly too.
