I ❤️ Christmas cake but no one else does
Anyone got a tried and tested recipe I can make and freeze in portions for me please?
Am I right in saying you can’t freeze with icing and marzipan (marzipan is the best!)?

I've made Christmas cake which is still good to eat in March! It's so rich it doesn't seem to go off.

I'd have thought marzipan would freeze OK, so maybe you could make an ordinary-sized one and freeze in slices? Wrap slices securely in film and put them in a ziplock bag.

I use standard Delia Rich Fruit Cake, you could make it square for cutting in chunks. It keeps for ages if carefully wrapped. (Use plenty of booze for preservative...)

Freezing will prevent me from scoffing!

We have a pud from last year (will feed again!) but I think it must be close to cake time

I’ll look at Delia as I use her Christmas book for the turkey
