I've just made rough puff pastry for the first time since about 1981 (school cookery class!). We want to make tarte tatin and I can't find ready-made pastry of any kind here. Fingers crossed it works out OK, especially as I've never made tarte tatin.

That is a good point, jacdaw - I often turn to Felicity for things I've not cooked before, and while I hate making shortcrust, Delia's quick flaky would probably have been fine.

The puff recipe I used in the end was like a combination of Delia quick flaky as I grated half the butter (frozen) into the flour then added the rest as small slices before bringing together with water. Then rested before rolling & folding a few times. I suspect I overworked it - when it came out of the oven the pastry had shrunk (but definitely had layers!)



Flipped, it looked the part and tasted pretty good:



I used Raymond Blanc's recipe on BBC bbcgoodfood.com though daughter decided to cut the apples smaller. They were Granny Smith's. I suspect the caramel wasn't quite right at the beginning (looked like it split) but it didn't seem to affect the end result!

That looks perfect! Mine never looks that neat. It also looks delicious; I need to make one soon.

I'm sure I used to use a Colin Spencer recipe, but I don't seem to be able to find it.
