Linds a vegan banana cake is easy to find a recipe for, add to that some toffee sauce - made using coconut/cashew nut cream, sugar and a vegan butter alternative? A thick sauce could be swirled through the cake mixture/or use the sauce as a proportion of the liquid that oes into the cake. Remaining sauce drizzled on as an icing afterwards... cup cakes could have a spoonful of the sauce put in the middle of the mixture and again as an icing?
