I made a carrot cake from a Nigel Slater recipe today, but used butter instead of oil (because I don't use seed oil, and oil in cake is (almost always) an abomination), and I reduced the sugar considerably, and used plain flour instead of SR, so had to increase the baking powder, and used about 25% brown flour. And I didn't separate the eggs and whisk the white separately, because that is just a waste of time and effort. And I added a few raisins instead of nuts. And extra cinnamon.

Then I cooked it in one tin rather than two, because I didn't want to stuff it with icing, so it baked for longer than he specified.

So now I'm wondering if I really did use Nigel Slater's recipe...

It was delicious, served warm with mascarpone, and beautifully light.

Just chop up a bar of dark chocolate if you can't get chips LG.

Sounds like my sort of baking jacdaw - more inspired by or based on than an actual recipe.

It's not that meringues are difficult Dave but time consuming.

Flour delivery on Friday, so yesterday included:
a rather dense wholemeal loaf,

boy2's victoria sponge with lime icing,

boy3's choc chip cookies

and rather excellent pizzas for tea.
