I'm knitting plain grey right now, a pattern called 'Francis' from her book "The Sock Drawer" by Verity Castledine - suitable for men or women (it's the dark red one if you see pictures). She's an Etsy seller called Truly Hooked.
It's a relatively easy design that is easy to count, and it's knitting quite fast because I'm thinking in pattern blocks so prefer to finish a block rather than just a row. I found the details on the Winwick Mum facebook page but the book is available on Amazon as well as Etsy and other places.

Easy is relative Pix, it can be difficult to say because it might feel easy to some and not to others.
But most patterns are just variations of knit and purl. The difficulty often comes with having to do lots of counting of stitches and/or rows, or finding it difficult to 'see' your knitting and work out where you are in the pattern.
Also how they're written can make a big difference. Try reading through and see if it make sense.
I reckon now you're familiar with how a sock is constructed you'd be able to do a pattern without too much bother.

Looking through (some of) the previous comments, things appear to be mostly needle craft stuff. I enjoy making things, but knitting is one craft I have never got one with (I have tried as my mum is an avid knitter) but I can sew, made wife an apron and a very rough and ready skirt for daughter. No pics of those at the moment but I thought I would share the keepsake box I made for my son. Carpentry is probably my favourite craft but I will put my hand to most things. It is made of ash with inlay of oak (I believe) and iroko.

Welcome Dragon, that's a lovely box, I'm impressed.
It definitely doesn't have to be needlecraft, anything will do, Bigleggy sometimes posts with carpentry stuff. All welcome

Thanks for the nice replies. My other recent project was a mirror for the hall. I did say I'll try most things MDF board, tiles stuck on with contact adhesive, pine frame then grouted. Took longer than expected but then I would rather spend my weekends with the family. Saying that, I am now wondering what project to start next. Probably have to work on the garden and the veg patch.
