And 'my' parkin (best in world, FACT) is much darker as I only use black treacle or molasses - noen of that golden syrup nonsense. PS Save the golden syrup for butties esp crusts of sliced white. Or a good tbs on a nice thin 'proper' pancake.

I don’t think I use the same one twice. Mary Berry’s was the one I used this year and it’s pretty good, though I think her baking time was slightly too long. Also Parkin is better when kept for a week at least before eating, so not really a true test on Bake Off

Sharkie Oct 2024 1:29pm, 30 Oct 2024 22,921 posts	Quote Pin Sharkie @Meglet I meant to say that re keeping the parkin AT LEAST a week I've adapted the recipe my Mum used - yes to black treacle and oatmeal - but she was almost vegan as she used 'Spry' which was a vegetable fat a bit like Trex - popular in the 50s and 60s. Butter for me, splash of milk, and I up the oatmeal to regular flour cos I like it.
