Personal observation: none of those parkins looked great tome. ICING? WTAF. And 'my' parkin (best in world, FACT) is much darker as I only use black treacle or molasses - noen of that golden syrup nonsense.

PS Save the golden syrup for butties esp crusts of sliced white. Or a good tbs on a nice thin 'proper' pancake.

Every year I have to search for the ‘right’ parking recipe which uses black treacle and oatmeal. I don’t think I use the same one twice. Mary Berry’s was the one I used this year and it’s pretty good, though I think her baking time was slightly too long.

Also Parkin is better when kept for a week at least before eating, so not really a true test on Bake Off

When Prue (I think) said there was a part of the parkin process that would take longer than the bakers might expect, I thought, "Yes, the part that involves leaving it in a tin for a couple of days."

@Meglet I meant to say that re keeping the parkin AT LEAST a week :-)

I've adapted the recipe my Mum used - yes to black treacle and oatmeal - but she was almost vegan as she used 'Spry' which was a vegetable fat a bit like Trex - popular in the 50s and 60s. Butter for me, splash of milk, and I up the oatmeal to regular flour cos I like it.

Just caught up as well. I am gutted, she has a huge personality and seems genuinely likeable. From the bakes it seems like the correct decision.
