It's been a bit cold up here for salads this past wee while, so soups for lunches for us. Usually make enough for two days so worth the time spent prepping all the vege! Today's was second day cream of mushroom and next two days will be chicken and lentil.

Hi Scribbs... welcome to the gang. Have to say 1260 is very low esp when you're exercising. I use the Scooby calculator to work out calories.
For me I aim for an avg of 1800 per day but dont eat exercise calories back (exception is if I am on a long run I do eat my snacks on the run)
Making a Scott Baptie recipe tonight (high protein) tonight its peanut chicken. I diligently put it in the slow cooker at lunchtime... and forgot to switch it on. Good job A went to make a brew at 2pm and realised. Its come out much darker than it should be so I've been tweaking it.
Cream of mushroom soup sounds lovely DQ. Enjoy your soup too LG (I love a good homemade soup but OH feels I'm trying to starve him if I give him soup haha)

Thanks for all the encouragement and support. I'm aiming for around 1500 cals per day and not claiming any back for exercise as that usually works out at less than 400 cals. But I'm not getting too hooked on the numbers.
It's definitely feeling a bit easier, also helped by Mr S wanting to lose some weight. As he's the main cook, I'm not always in control of what I'm eating, but if I make decent choices at breakfast and lunch, I seem to be doing okay. I feel a bit more positive about it after a week.

I don’t count calories….. or anything, really. If I counted, it would be carbs. But since I’m NOT trying to go keto (been there - too hard to maintain consistently - although I would countenance cycling in and out of ketosis as a strategy) my guide to how much carb to eat is what my blood glucose response is. So I’m paying attention to how much my BG rises after meals, and adjusting what I eat for future meals.
Today I have eaten:
Breakfast - 2-egg omelette with a bit of red pepper and baby tomatoes and a cup of tea.
Lunch - warm goats cheese, beetroot and walnut salad (from local deli) and an apple. I was REALLY full after lunch!
Tea - stir fry chicken - made from scratch - with mixed veg, bean sprouts and a small helping of noodles. Flavoured with fresh ginger, garlic powder, chilli flakes, soy sauce and mirin. It was lush! Followed by strawberries, raspberries and Greek yogurt, and topped off with a few squares (about 15g) of dark chocolate with ginger.
I had to be out too early this morning for a gym trip to be realistic. But when I was waiting for a passenger this morning (I volunteer as a community car driver) I walked for about 35 minutes, plus 2 shorter walks on the way to and from the office afterwards.

After a couple of people mentioning it, I've downloaded the MFP app. I don't plan to pay for it - even though the ads are really annoying! - and I doubt I'll manage to log everything. But it may help me by showing which foods are the ones with more calories than I probably think there are 😅
