Up to a point WS. True, if the bowler is over the wicket and bowling arrow straight. If it is angled in, or seaming etc. you have more change of being hit outside the line...

Batting outside the crease mainly cuts down the amount of swing faced for the LBW.
If the bowler bowls his "normal" length to a batsmen batting outside the crease, then it's likely to have swung less or be easier to hit (e.g. a half volley). If it does hit the pads, it's also more likely to be hit outside the line.
Or if the bowler adjusts the length, then yes height becomes an issue.
The days of doubt from the umpire are gone (due to DRS), but it doesn't negate the benefit of batting out of the crease.
It's a trade off between the increased risk from stumping to reducing the risk from swing.

Height? Nope, the height of the bounce will be whatever, outside the line, yes, marginally for a good length ball.

Batting outside of your crease *does* alter the height of the ball at the batsman.
A good length ball to a batsman batting on the crease is a half volley to one batting 1m outside the crease.
So a good length ball to a batsman batting 1m outside the crease is likely (unless the pitch is misbehaving) to be going over the top of the stumps.
The reduced reaction time is an issue, but I think most of these guys are so good at anticipating and facing 80-90mph bowling that the fraction of a second difference doesn't make a huge difference. It might be the difference between facing an 80mph ball and it "feeling" 83mph or something.
So may slightly increase the likelihood of a nick or possibly a bowled (and definitely a stumping, but if the keeper can stand up to a bowler, they're likely to be at 70mph anyway rather than 80ish), but does reduce the lbw risk.
