I saw a recipe the other day - just banana and desiccated coconut cookies that appeals to me but not tried it yet.

This is a good one for using lots of bananas. I make it with gf plain flour and have never bothered with the icing: bbc.co.uk

I've just made a batch of oatcakes (Scottish style, baked ones). The last batch I made last week, I forgot to put the butter in, and they were as hard as ship's biscuits. We take them out on long trail runs (/walks) sandwiched with peanut butter and marmite or peanut butter and honey; not ideal when they as hard as bricks.

I'm also trying a no-bake Clif bar type thing, based on this recipe:
browneyedbaker.com

but without the whole peanuts (I don't really like raw peanuts), and honey instead of rice syrup (because I had some honey, but not rice syrup). I'm going to try them out on a 25 mile run tomorrow.
