I'm hoping someone here might help me figure out the best way to make gluten-free pastry. I'm cooking for a friend next weekend and she doesn't eat gluten.

In the UK I would probably just buy some Dove Farms gluten free flour. It's a mix of potato, buckwheat, rice, tapioca and maize. But I haven't seen anything here which is like that. Do you think it would be OK just to use a mix of rice, potato and buckwheat flours? I can definitely get those separately.

Thank you LMH. Just took a look. I think I will struggle to get xanthum gum and tapioca starch.

You can get both from Amazon but it might be quite expensive if you're only going to use them as a one off. No coeliacs where you are?

I'm sure there must be - just not quite the choice that we get in UK supermarkets - maybe because Sweden's population is only 1/6 of the UK's. Having read the excellent link you posted I have ordered some xanthan gum at least.

(I could ask my friend of course but I don't think she bakes much so she probably wouldn't know.)

Before the supermarkets here began stocking the amount of gluten free basics they do now sallykate I would buy from health food shops - worth a look if you have any of those.

Yes; I used a recipe based on Larabar. Basically 1 1/2 cups of dried fruit (mostly dates) to 1/2 cup of almonds or other nut, pinch of salt, flavouring as required (eg cinamon).

Soak dried fruit until soft, stick everything in a vitamix (or similar), and blast. Try to avoid the vitamix burning itself out using on / off pulses.

Press into a tray lined with baking parchment and refrigerate.

I made quite a lot of date / almond / cocoa ones. Or possibly cashew, or pecan? Sorry, been a while. Pretty good, but level of stickiness varied quite a bit. Never as hard and dry as a nakd bar.
