Probably the biggest bubble I've ever seen in a sourdough loaf I've made:



I have no idea whether that means it was underproved (it probably was) but I'm happy that I made a loaf from a starter which I thought was dead.

It was very edible and made me happy. I wait an hour after baking then nab the end crust with plenty of good butter. Just gorgeous.
