Chocolate polenta cake baked today and pronounced a success. Cheaper than using ground almonds and no flour required if people are still having difficulty getting it. Dairy free too.

A bread making question: how do you do the slashing on top?
I try and do it with our sourdough, but even my sharpest kitchen knife drags the dough rather than slashing it. It doesn't affect the taste of the bread, but just sometimes it would be nice to bake things that look good too!

I used to use a razor blade, but actually found that using our bread knife (serrated) works best, doing a quick, definite slash so it doesn’t drag

Thanks panad, I'll try the bread knife next time - I was using a normal kitchen knife.

Sharp scissors also work very well on the top of sourdough.
