Fig and date cake has taken a proper hammering but I have some nicely ripening bananas that I think will be spot on by Sunday or Monday ;-)

That yeast is *very* expensive, but at least it is becoming available.

I baked a 'fatless' sponge today, to use up some of my egg glut, but I reduced the sugar too far, and the result is a little tough and a bit eggy flavoured, maybe a bit dry. All of these features seem to result from too little sugar. I found this article after baking the cake:

Looks like the less fat, the more the sugar matters. I reduced the sugar by half.

Nice enough to eat, though. Stuffed full of jam and cream.

Surely the cream counterbalances the fatless sponge?

It must be the end of days, my neighbour came to borrow sugar to make a cake. I said I didn’t know how much I had so weighed it out, it was just enough. Then he asked to borrow the scales, I guess he doesn’t bake many cakes then with no scales!!

Also, don't eggs have fats?

Anyhow, hopeful as regards my bread, it'll will be in the taste rather than looks, it has come out shaped like a big bar of soap.

Yeah, it is full of fat from the eggs, but if you don't put butter or equivalent in the cake, it seems conventional to call it fatless or fat free. I'm only interested in using as many eggs as possible while not using up all of my butter, as I'm trying to manage on one shop per week.

I try to eat as much animal fat as possible, as a rule of thumb.
