Currently mine appears to be pork and leek, from my local butcher, judging by my freezer contents, but I would have said pork and cracked black pepper from Axons of Didsbury.

Cauldron Lincolnshire Sausages (the best vegetarian sausages by far). When we went vegerarian, we found that sausages are the one "meat" food we sorely missed. Cauldron sausages allow us to enjoy our Saturday morning brunch ritual as we did pre-veggie.
They aren't gritty or grainy, just very nicely textured like meaty ones.
Always preferred Lincolnshire sausages, which helps.

Good call. When I lived down South my local butcher used to make them.....I quite like those Greman breakfast ones served in hot water...

So many sausages, how do you pick a favourite?
Agree about Lincolnshire, my breakfast sausage of choice. But sometimes I fancy a pork and tomato sausage with my fry up.
Any of the German sausages, cooked like they do at Christmas markets over charcoal and served with sauerkraut.
Spicy Mergeuz on the BBQ
Italian pork and fennel, stirred through pasta
Does black pudding count?
God I'm hungry now, I want a sausage!

um
Worried that toulouse sausages might have been andouilette, but fortunately not. The one time I tried one of those, the waitress (in french) asked 'are you sure?' then 'do you know what it is?' before serving me. It was a one time trial.
But my favourites - cumberland or lincolnshire. Real meat, I'm afraid, and no vegetables, fruit, honey or other weird things. I'll allow pepper and maybe herbs.
Also partial to the dried saucisson as a nibble/snack. But missing that since I no longer visit France on a regular basis.

It may be that lockdown is having an undue effect on my brain, but I'm going to drive to Dewsbury for sausages when this is over because of the butcher's twitter feed
