:) It's a super simple recipe. I used butter instead of Stork (obvs), golden caster, and raisins as I didn't have sultanas. Also used some glace cherries added after the flour.

I haven't made Welshcakes since our last winter powercut, probably about 4 years ago - when I cooked them on the griddle on the fire because we were hungry!
