Well done Pam, Snail and LeFromage.

Someone at church this morning asked me if I had lost weight, she thought I looked like I had. I said yes, a bit, but that my focus was on managing diabetes more than weight per se.

I say that to protect myself, really. From my own inclinations towards perfectionism and obsession. I’ve been overweight since I was 8 and obese since my teens. I don’t have a concept of myself as a normal weight person, and trying to become one multiple times through strict and prolonged diets has, imo, damaged me. I can’t afford to get obsessed with my weight.

At the same time, I want to lose weight and am pleased that I am. Daft, isn’t it?

I don’t want to “be on a diet”, I want to make changes which are sustainable for me. I suppose that doesn’t preclude having periods when I make an extra effort…..

Having seen recently how my blood glucose is responding to even moderate amounts of carbs, I really can’t afford to get back to a place where bulk carbs and sugar are daily occurrences. I just can’t.

Just been to the supermarket for a few things, and walked past the displays of hot cross buns and Easter chocolates. I practiced saying “that’s poison” to myself - because, for me, it really is. Because it spikes my blood glucose something rotten. While that’s OK once in a while, if it happens regularly, it becomes a problem. And the thing is that - to me - these foods are addictive. It’s not quite one taste and I’m hooked, but if I had things several days in a row, it would then be harder to stop.

So better to keep them as rare deviations from the norm.

Lunch will be salmon done in the air fryer with new potatoes (just 2 little ones for me) and loads of mostly green veg, slathered in butter. We’re not afraid of fats in their natural state on low carb. Then there will be berries (that’s what I went to buy), which Mr will have with Greek yogurt, but I’ve bought some double cream to put on mine. As a treat, not a daily occurrence.

RevBarbaraG, apologies if you know this already but if you eat cold (or re-heated) potatoes, rice and pasta they have a much smaller effect on your blood glucose.

As the foods cool, the starches undergo retrogradation and become a form known as resistant starch. This isn't digested, so has no effect on blood glucose.

Resistant starch is also a good pre-biotic so helps your gut biome too (from which everything healthy flows in my humble opinion). So, enjoy (in moderation of course😊).

Ah, that’s one of those things I used to half know and had forgotten.

I thought, who wants to eat cold potatoes? And then thought: potato salad, mmm….

Anyhow, thanks for that - I will file it away in the mental database to be pulled out when relevant.

I must say, get you weren’t meant to reheat rice, isn’t there a risk of food poisoning from it?

The most important thing with rice is to cool it as quickly as possible. There is a specific bacterium which can affect it but if you cool quickly and reheat thoroughly it's fine. And don't keep it longer than two days.

One hour after eating, my BG has gone from 6.9 to 7.7 - which (for someone with diabetes) is a modest rise. It may not yet have peaked, of course, but I have set a timer to check again in an hour.

Thanks, SallyKate.

I can make use of this….. when I make curry, for example, I usually cook enough for 4 portions and we have the second half the following day. I could do the same with the rice, and have reheated rice on the second day.
