Slightly faffy - use a peeler to get the courgettes into thin ribbons, then into matchsticks. Salt and drain for an hour. The batter is 140g flour, 1 egg, fresh mint, oregano and 80g parmesan with 60ml water (says sparkling but I didn't have any!). Squeeze the courgettes dry and fold into the batter. I don't have a deep fat fryer so I just shallow fried which worked fine Mix made 12 altogether.

Loving the newts today.
I have been to a new to me restaurant for lunch as it's my Mum's birthday. And I have also ticked yes for paddleboarding with Dipps, which is not new as I did it last year, but it is brave as last year I ended up in tears and a total mess.

First newt is getting the train to Cambridge. Driving is shit but the train is even shitter, tubes were packed. I can get some marking done now though on the world's slowest train

AL: I do something similar but I grate the courgettes and use feta not parmesan. Your version sounds unnecessarily faffy, sparkling water WTF?
