I've been making microwave mug cakes, no eggs and can be dairy free, not rubbery. I use 50g Sr flour, 10g sugar (probably should be more but I don't like it too sweet) 15g light olive oil and 45g oat milk (or other of choice) add flavour/fruit/whatever to preference (I pour the mixture over a bit of syrup sometimes and have it like a syrup sponge pudding) 1min 30 or just under in the microwave. It's not the best cake in the world, I'll be honest, but it's nice for a quick fill the cake gap.

Microwave cakes don't keep but can be nice as Purps says egg free and eaten immediately.

They are amazing LMH and so easy. I took them to parkrun and now I'm not allowed to bring any other cakes ever again. You can easily make them vegan too if necessary and I guess gf.
I'll put the recipe in the article.
