Red Squirrel
I had a red cabbage in my organic box today but no balsamic vinegar, so couldn’t make braised cabbage. I looked on t’internet for red cabbage ragu and found this lovely recipe. I didn’t have any red wine or oregano and I used fresh tomatoes. It was still really good and I served it on mashed tatties and carrots. lowlyfood.com |

That looks great! I've never used balsamic vinegar for braised cabbage - my usual recipe is Delia and she uses wine vinegar (doesn't say red or white). As she puts apple in, cider vinegar would probably be good too. |

I had no vinegar in the house at all, otherwise I would’ve substituted. Yes, the ragu was really good. I loved it with mashed tatties and carrots and scoffed it all.

I’m keen to try more of his dishes - there’s a really good recipe finder on that site. That red cabbage ragu is gonna be a staple this season I reckon. Bloody delicious! |

Red cabbage ragu again tonight. Still don’t have all the ingredients. This time I do have oregano but no red wine or tomatoes. I put in extra tomato puree and a splash of balsamic vinegar instead of red wine.
