This makes a quite a big one...
Make and bake blind a pastry case (8 inch fairly deep pie tin)
Mix 300g sugar, 3 x 15ml spoons cornflour, 3 x 15 ml spoons plain flour, zest from 2 lemons and 1/2 tsp salt in a large microwavable bowl. Slowly add 300ml boiling water and stir to make a smooth slack paste.
Cook in the microwave for ~~ 3 x 3 minutes, stirring between each - until it's thick and translucent. Add 2 x 15 ml spoons butter, the juice of the 2 lemons and 3 egg yolks. Stir well until all incorporated and then cook in the microwave for about 5 minutes, stopping to stir a couple of times. It should look like lemon curd when it's cooked and be quite thick.
Pour into the cooked pastry case.
Make meringue from 3 egg whites and 75g caster sugar - stiff peaks.
Dollop the meringue on top and spread carefully to cover the filling ( my recipe says pipe it and has all sorts of fancy swirls in the pic, I just twiddle it a bit with a spoon)
Bake at 180C for 12-15 mins
Cool before cutting
(husband likes his warm, I like it cold)
This is Mrs Beeton C 1985 with my changes to make it work in the microwave, the original has "pour into double boiler and stir for 0-30 mins until thick" for the first cooking stage. Hope it works for you

First ever steak pie - my mum makes an amazing steak pie so I'd always relied on her.
Turned out very nice. Flavour was good but the filling needs more thickening next time.

Ooh butterscotch angel delight. Eaten out of the measuring jug.
We had macaroni/cauliflower/broccoli cheese and sausages for tea. Yummy. And leftovers for tomorrow too. Boy 3 has requested flapjack baking tomorrow 😀
