The same kinds of arguments have been going on in Darlington for a while. The local cheese and wine shop closed and a new owner is about to reopen it. The problem as I see is that not enough people are prepared/can afford to pay pretty much double the cost of the supermarkets (you can park free for 2 hours at our Sainsbury’s which is no more than five minutes walk from the posh cheese shop). The baker next door and another in the next street both seem to have good business selling sourdough loaves at £4.50 a throw, so the quality gap between artisanal cheese and supermarket cheese must be smaller than between good bread and supermarket bread.

Also, there’s no shortage of posh cheese in Waitrose where I can park without hassle.

There's at least three posh cheese shops closer to me than any big supermarkets. But I suppose we are in Wensleydale.

As Cerrer no doubt knows we have a posh cheese shop in Cambridge, imaginatively named "The Cambridge Cheese Company". I'm not sure if it or the Milton Tesco is closer to me.

And if you can afford to shop there you probably afford to park a car in central Cambridge, or can spend a million quid on a nearby Victorian terrace that would be considered slum housing in Brig or Darlo.

The local farmers markets and farm shops regularly have cheese stalls but no local cheese shops that I am aware of other than half an hour away in Lichfield, sadly.

Hummus recipe:

Proper hummus is served with a drizzle of olive oil, rather than oil being a significant ingredient in its own right. This is what should go in it:

• 1½ cups cooked chickpeas or 1 (15-ounce) canned chickpeas, drained and rinsed*
• 3 tablespoons tahini
• 3 tablespoons lemon juice
• 1 garlic clove, mashed
• ¼ teaspoon salt, or more to taste
• Approximately 2-4 tablespoons room-temperature water or aquafaba, or more if needed
• Optional garnishes: extra virgin olive oil, sumac or paprika, finely chopped parsley or other herbs, whole chickpeas

This particular recipe from thymeandtoast.com but it’s typical of the Middle Eastern way of making it.
