Tough choice.....ITT for me if the GC is still in play.

As said elsewhere, easy choice for me; PR all day, every day.
Vuelta summit finish would be second choice, followed by Giro TT.

This is what multiscreens are made for. PR on the TV, Vuelta on the iPad, Giro on the phone. Job done!
(Now I need to check which provider all of those things will be watchable with!)

I expect all three are on Eurosport player and one will be on ITV 4 (but is it live or highlights?)
Actually Eurosport player probably makes it quite easy to catch up with the other two. I expect it will be the last hour that will be of interest GC wise in both.

Watch one live, go radio silent then watch the other two recorded or playback....
Be like watching TV as a kid on FA Cup final day from the start of ‘cup final swap shop’ to the final whistle....

Yeah that's the plan TRO. PR is more unpredictable so watch that live. Then watch the GTs fast forwarding where necessary.

We may exploit having work computers at home, and have all on simultaneously. We've done two races before; three may be a challenge to keep up but should be fun!
That all assumes it will still be that way by then. Sadly Amstel Gold has been cancelled as of today.
