It is worth bearing in mind how influential 'the edit' is on shows such as this. Last night's critics were more relaxed about giving their views on each dish, and this contrasts rather with how Marcus & Monica voice their critique.
It would have been useful to understand why a third chef was chosen - of course, if I've missed this part of the process, I'll gladly apologise.

Intrigued about the statement at the beginning tonight saying this episode has been edited to show 3 out of 4 chefs. They usually say if someone was unwell and had to leave. We wondered if there was an issue and a chef walked out, or refused to let their filming be used.
