I test-baked some of those low-carb mince pies on Friday evening. The almond pastry was quite difficult to work, and fragile - but once baked, it held up fine. I have to admit that the filling doesn't look as appetising as your actual mincemeat - but it does taste quite nice.

I took a couple along with me to a church lunch yesterday, and one woman did a very poor job of concealing her disdain for what I was about to eat :-(

Here you go. I haven't got any soya flour, so I substituted more coconut flour. When I came to roll it out it was incredibly dry and wouldn't hold together, so I added more water until it would. I belatedly remembered reading that coconut flour absorbs a lot more liquid than other flours.

I'll have a play - I don't eat coconut or soy, but I've got quinoa flour and I'd always choose butter over oil- might just have a play with small amounts and see what happens :)

Trouble with low carb, is it's so hard to do with eating local/British/ minimal "air miles"! my save the planet head tends to win over my save my waistline one. So I end up eating the same as everyone else (british wheat. lots of butter, sugar from sugar beet etc) hmm, sooo hard!

I'm trying to think which of the foods I regularly eat have travelled a particularly long way. Certainly all the meat and butter can be locally sourced... my eggs come from a nearby farm.... I guess it's the non-seasonal veggies and fruit that rack up the food miles. Oh, and nuts.

We could all add an hour of gardening to our daily tasks (thinks that realistically, most folks are far too busy already) and only eat what we grow for ourselves. My father does something very similar, and doesn't even bother to blanch the stuff he freezes.

Nuts I think are a big problem Rev - I love them and could happily live on them - but they're grown on huge monoculture / farms these days and shipped around the world and I feel so guilty! '
The trend for Avocados and coconut isn't so "green" either :(
I'm out of spinach and rocket from the garden now - will have to find something to eat in the winter - garden isn't big enough to grow much of anything :(

2lb off for me this week - trick over the next week is to keep it off as have 3 Christmas Meals/Parties to go to.

SW scales are probably totally accurate but the clothing I wear makes a difference. Hence last week they showed no weight loss, and this week I got slimmer of the week with 3.5lbs off and my half stone award.

The figures on the spreadsheet here are the consistent figure measured under the same conditions at home.
