Splendor and Century are a couple of games that I found both simple and engaging (sadly I don't have a local group of gamers to play with so don't get to play often).

Carcasonne is only good if you have 4 players and all fight to compete for the cities or roads... otherwise it is just a tile laying game with no purpose

Completely disagree. We play it almost exclusively three handed at home with no issue and it gets played a lot.

Our game playing children are 15 and 17 and they hate flamme rouge - although I love it. We play Azul and Quacks. They all like Everdell but I don't really enjoy it as much - I think it's because I don't really pay much attention to what others are doing, so tactically there is not much messing up what others are doing! Another favourite is Hare and Tortoise. And recently we got Doomlings so that has featured a lot recently. Another one that gets taken on holiday a lot (because it doesn't have a massive box) is Bohnanza - or 'the bean game' as we call it.

Just to amend... Carcasonne plays better if there are 2+ players... there is a standalone version for 2 players called The Castle which is excellent! Forces the contests so it is more involved for 2

Welcome, @Cheg. I haven't played it. It looks like a fairly straightforward roll-and-move game?

Yeah it is ever so simple. You will do well to find a copy of it. My Dad and his mate Phil created it in the 80's. It is a really fun roll and move game. Think there were only 1,000 ever made.
