I have a surplus of brown lentils - does anyone have any favourite recipes they wouldn't mind sharing?

Salad with aubergine and tomatoes - one of my favourites, I can't find the recipe online any more but here you go (it's an Ottolenghi). Prick the skin of an aubergine and roast it in the oven or over a flame until blackened. Cool, peel and chop the flesh. Semi-roast some cherry tomatoes - halve them and put them in a single layer on a baking tray then cook at about 130 C until shrunken but still moist. Cook the lentils: boil with half an onion (whole but cut to the root), a few sprigs of thyme and a bay leaf. Drain and remove the herbs and onion. While still warm, add to some olive oil into which you've grated some garlic finely. Season with salt and add some red wine, sherry or balsamic vinegar. Mix the lentils with the auberine and tomatoes. Good with some toasted pine nuts for a bit of crunch, and some goats cheese or feta if you eat cheese. Quanity-wise, 150g of lentils makes a good few portions and I'd probably use one large or two medium aubergines for that many. Roast lots of the tomatoes and keep some in the fridge for snacking, they're delicious. They should make a decent veggie pate too but I don't have a recipe to hand. |

Naturli was a good tip from a couple of pages back. Got some from Sainsbury's and it's surprisingly (possibly ironically) creamy.

Thanks sallykate - you roast the aubergine whole rather than in chunks? I like aubergine but only when it's just about overdone. Cold roasted tomatoes aren't for me but I do like them warm. Unfortunately my lentil mountain is somewhat larger than 150g, there are only two of us and I'm not sure how OH will eat them - he wanted them for a very meaty Spanish dish, we couldn't get any for weeks and then a friend got some for us only they got 2 x 1kg bags as they were on offer............

They'll last for ages! yes, whole roast aubergine, done until it collapses; after it's chopped it sort of disappears into the salad and just leaves the smoky taste.

Mum used to make these when I was a kid and I really liked them. She served them with a spicy tomato sauce. Don't know whether I wd like them now but I have fond memories deliaonline.com |
