Very similar for tomorrow except used Vietnamese flat rice noodles and red pepper in the place of Chinese leaf.
Plus dark choc. 2 boiled eggs. Sable grapes. Apple.

Today:
Bought a Kilner jar and layered:
Peas Egg noodles Chinese leaf Carrot strips Chilli Fresh basil leaves
Poured stock in + soya sauce and left for 15 mins with lid secured.
Topped with squeezed lime, toasted sesame oil and chopped, boiled egg.

Ooh - not posted in here for a while. Lunches have taken an interesting turn. I'm trying to clear a debt and from August have been living on £10 per week for food with some interesting lunches eaten as a result. (I've pared everything else back too, cancelling my gym membership, continuing to wear shoes with holes in, finding freebies where I can.)

So today's lunch is a boiled egg, a bulgur salad with sun dried tomatoes, grated carrot and chick peas + a lemon, olive oil and garlic dressing. I've also got some left over parsnip soup.

Yeah - it's not too bad Becca. I've had some great help from people clearing out their cupboards when going on hols or just donations generally, left overs from gardens and allotments and friends cooking for me or treating me to food out.
Using the budget over 4 weeks didn't work, but week by week is fine generally. Certain cuisines easier than others.
I've paid off nearly £5k since starting in August. I do have other jobs tho' and have sold a few things. Just over £3k to go and then I want to put my flat on the market and move.
