I've been doing something different this week and loving it.
Get a bowl Lay thin rice noodles in bottom Add chopped and thin veg (pak choi, bean sprouts) Add slivers of ginger (and chilli) Add protein (tofu or prawns in my case) Add chopped green spring onion ends Add chopped coriander Cover with hot water from a kettle or hydroboil and put a well-fitting plate over for 15 mins. Uncover then add soya sauce and lime juice before eating.
Last week I used chicken stock from a cube on one day and miso paste on another. I plan to bring fish sauce and mirin into work + aromatics like lemon grass and lime leaves. I always include complex carb, protein, veg carbs, aromatics, liquid and toppings and try to keep it on a theme (Chinese, Korean, Thai, Japanese). I may try a minestrone next week with Parmesan grated over the top and tiny cooked pasta thrown in.
The soup isn't as tepid as you would expect - it seems to hold its heat reasonably well.

Beccca - you could do the prep the night before and tip it into a bowl at work. A couple of people at work have shown an interest, so I typed a simple table to give them ideas under each category.
