I first encountered filter coffee in Germany in 1972 and was told always to add a pinch of salt.

Must admit I've not yet tried it, because every time I'm served a horribly bitter cup of coffee I don't have salt to hand. I need to seek some rank coffee out and see if the salt does the job for me.

I heard an interview with the author of the piece in question and the salt was used to help reduce the "scum" formed when microwaving the tea - apparently that's how the Americans do it ......
