Haven't eaten cheese in a couple of years ~ the nearest I've got is a slight taste transfer on pineapple chunks at a buffet :-o

It was a nice treat :-)

They didn't say not to freeze other cheeses, just that they're usually more crumbly when you thaw them. Maybe we should stop talking about cheese, it's causing an unusual level of disagreement and stress :)

I've made cheese, it's called ricotta in the recipes but is more faux ricotta, but it's very nice and dead easy :)

Honest it is very simple! Heat milk with some lemon juice, stir, strain through some muslin. Not much more complicated than making toast!
