Sometimes and sometimes. There will always be a decision prior to the bout about who is going to win, and usually how (most wrestlers have a signature finishing move which they'll want to win with). There will always be some pre-arrangement to the course of the match. Whether it's entirely choreographed depends on the wrestlers involved and the setting. If they've worked together a lot and it's a low key show then they might decide to "call it in the ring" and just make it up as they go. If they've not worked together much, or if it's a big show with a lot riding on the match there will be more preparation and pre-arrangement.
And whatever is agreed in advance audience reaction might well change things as the match progresses, so if one thing isn't working or they're not getting the reaction hey want, then they'll have the freedom to switch things during the match and work the crowd.
It's not sport. Its a show, but I get a bit annoyed at the "it's all fake" thing. I've seen it up close. There aren't any special effects in wrestling, or clever editing to make it look good on the telly. Those guys (and girls) really do that stuff for real.

Veganism won't save the world, or even close, and it is not a healthy human diet. Food from grazed livestock is not a challenge to the climate, and allows food production on land unsuitable for other food production. The use of livestock in sustainable arable with long complex rotations, and periods under grass is far better than any arable system with synthetic fertiliser.
It is being promoted by large food processing companies because it is an opportunity to sell low value foods at high prices.
And don't even ask about the influence of the seventh day adventists.
But don't eat factory meat!
