i thought it would be great to have a little sharing

sweet potato topped fish pie

500g sweetpotato peeled and chopped
150g reduced fat cream
5 spring onions

200g cod lion cut into bite size

200g salmon fillet cut into bite size

175g prawns

juice of one lime
165g can of one sweetcorn drained
1tbsp of chopped dill

1 pre heat oven gas 6 200c or fan 180c

cook the sweetpotato in a pan of boiling water untill tender
2 meanwhile place the cream spring onions prawn and all the fish in anouther lidded pan

and bring to a simmer cover and simmer 2to 3 min to cook the fish

squeeze in the lime and stir in the sweetcorn and dill season with black pepper spoon in the mixture

into a shallow oven proof dish

drain the cooked sweet potato and mash

spread the mash over the top and cook for 15 min

we have just had this for tea and my 7yr old ate it serves 4 and if you like to know it a ww recipe and it only 6.5 points but it is very nice i loved it

my food isnt low fat or low calorie
:)

last week i made a slow cooked beef daube
Fried off some braising steak, onions, shallots, streaky bacon and poured in a whole bottle od red wine, a bayleaf and some thyme
then i left it on a REALLY low heat for 4 hours

it was YUMMY

it does not have to be low fat or cal just share it a good way for us to try diffrent foods

it about making food and not buying tv dinners

i shared my fish pie out for it was for 4 people and it was just conor and i so my friend has the rest for you can re heat fish so could not use it as left overs

I made Broccoli & Cheese soup for lunch (from Jamie - used broc instead of cauli), and will make his butternut squash and chorizo soup when I've washed the pan up :-) Shame chorizo is so pricey :-(
