Agree on the 'air pockets' thing.
Disgraceful - they don't even list 'air' amongst the ingredients, always call them 'deep filled' and by God the pictures on the box don't show all the bloody air you actually get.
Home made folks, you know it makes sense. Mrs TRO has demanded another batch of home made, with a slight tweak to my recipe: add about half the lemon zest, but double the finely diced apple compared to batch 1 to the base mincemeat.

I think we need a biggest air pocket in a mince pie comp - photos preferred :-).
I've seen a few where the mincement is a think layer of brown sludge at the bottom.

I saw that M&S are also selling mince pies with added frangipane (I am tempted, I like that flavour - almonds are another Christmas cake marzipan feature!), so maybe the standard ones have a gap for the extra filling >:-)
