When I've cooked GF for friends I've opted for not trying to line a tin but doing it more like a galette - so a circle (ish) of pastry with filling in the middle and the side of the circle folded partly over the filling. Otherwise it reminds me of trying to handle rich sweet pastry, impossibly brittle.

If bought was an option I'd eat more pastry Linds. :-) Unfortunately the gf ready made pastry I've tried (just about everything on the market) isn't worth the money or calories.

That's my experience of gf pastry too sallykate.

Pix - gf sponge cakes are relatively easy once you understand the science.

My friend does a v tolerant GF pastry, I'll ask for the recipe.

UK cocoa is Dutch processed, just needs specifying in US recipes.
