I am back on ribollita: onion, garlic, celery, carrot, leek and pepper sweated off in olive oil, add two cans of beans (variety up to you - kidney / cannellini / borlotti are all good) and a can of chopped tomatoes, plus a bit of veg stock cube/powder. Simmer for 15 mins then add some chopped kale or cavolo nero and cook for another 5 mins or so. I use frozen kale. Makes four large portions, perfect lunch with a bit of bread and cheese, or you could add in some cooked rice instead, or pasta.

I cannot find any good, shop bought soups. You would think this would be an easy thing to put in a carton.

Wife made Pea and Ham yesterday, so having that again for lunch. So good :-)

So many soups in shops seem to rely on additions like modified starch, which (to my mind) give an unpleasant texture.
