My very quick carrot and tomato soup recipe

A few carrots, peeled and chopped
One red onion chopped
One tin tomatoes
One veg stock cube
Couple of heaped teaspoons Italian herbs
Teaspoon sea salt
Handful fresh coriander

Put everything apart from coriander in a pot, add boiling water from kettle, simmer until carrots are cooked, add the coriander then liquidise. Serve with otional crumbled feta cheese and a few leaves of coriander as garnish

Sounds yummy.

I made pumpkin soup over the weekend. I fried diced pumpkin, red onion, garlic, leek in a pan for about 5 minutes. This time, I used coconut oil for that. Added curry, pepper, coriander, cumin, a tiny bit of cinnamon, chili flakes, nutmeg, turmeric, dried coriander leaf (when I don't have fresh leaves at home) and sage. Filled up the pan with vegetable stock, let it simmer for 10-15 minutes, put everything through the blender, done. It was delicious and very warming. I'll definitely prepare that again these days.

I've enjoyed a ribollita-type this week: soften onions, carrot, garlic and pepper in olive oil then add cannellini beans, a can of tomatoes and a bit of veg stock and simmer for 20 mins. Shred some cavolo nero and add to the pot, cook for five mins or so until the cabbage is done. Stick a portion in a bowl and grate some cheese on top to melt. I think I also added dried oregano and a bit of smoked paprika. Oh and some cauliflower because it needed using - definitely not in the traditional recipe but TBH this is one you can flex according to whatever you have.

(Should clarify that the beans need to be pre-cooked, so either out of a can or ones you've boiled beforehand.)

I had some carrot sweet potato soup recently. For 3 bowls of soup I used:

2 large carrots
1 large sweet potato
1 onion
1/2 chili
some left-over bell pepper slices
1 clove of garlic
1 slice of ginger
500 ml vegetable soup stock
freshly ground pepper and various herbs and spices

It was a very lovely, warming soup
