Gooseberry crumble or fool. You can pop a sprig of elderflower in with them.

I've not had gooseberries for years, decades probably. I have vivid memories of us eating gooseberry fool made by my Granny, and dipping trifle sponge fingers into it. I can picture sitting at the table on my grandparents front room.
My mum used to make a nice strawberry and gooseberry jam. I liked it more that strawberry jam, which could be cloyingly sweet.
Saying that, if I had them now, I'd probably make crumble.

Finally starting to get a near-decent loaf from my new starter (and unfamiliar oven).
It sprang but in the wrong place!
Crumb OK - maybe a bit underbaked / under-proved, quite dense but very edible.

I know all my banana bread pics look the same but this one is vegan
Last time I tried that it sunk. This time I put more baking powder in - 4tsp when the recipe called for 2.5. And flax eggs made w 2tbsps milled flaxseed and 5tbsps water.

Ohhh flax "eggs" sound interesting and feasible for my vegan friends...
