I've got a glut of bananas, thinking of baking for work on weds, any recommendations?

@TBR your sourdough looks good - maybe a bit underproved? And how are you baking it? I get good results from baking at max oven temperature in a casserole for 25 mins, then uncovering and lowering the temp to 180 for another 25 mins.

I don't have a casserole dish but I've used the workaround of using a baking tray with boiling water underneath for the first 20 minutes to steam it, then take the tray of water out for last 20 minutes. I've not reduced the temp at that point so maybe that's another thing to tweek? Also it gets quite browned in the first 20 minutes so keep thinking too high a temp?

Yours is a lot paler than mine - here's Saturday's effort (which has almost no oven spring to speak of, I think it was overproved):

Mini Nico made 2 of these sourdoughs for Mother's Day...



The one slice I was allowed was very nice. The new "sponge" method seems to be much more reliable. As does cooking it in a cast iron casserole.

Poppy - I've recently started making Ed Ball's banana bread (minus topping and with reduced sugar) which has been a big hit. bbc.co.uk
