I think Baileys goes off after it's been opened but is OK in an unopened bottle for years.
My dad got through a few bottles of Baileys after Mum died, in addition to his usual whisky nightcap. He thought he was drinking it in secret, but I could tell because it made him sing.

That's good to know. Thanks, Pix. Actually I've been thinking of looking for recipes that have Baileys in them. I'd have to sample it to check it was still OK first though, of course! 😉
