From the Hairy Bikers Mums Know Best series, a ginger cake with 1 egg and 2oz of margarine - and 9floz of hot water among other things. Made a very thin batter and a lovely cake when it was baked.

I've recently found a wartime recipe for a frugal fruit cake with no eggs or butter that's on my pile to try. Latest bake was a ginger and salted caramel traybake from the Sainsburys website which converted really well to gf and is like sticky toffee cake.
panad Aug 2023 7:41am, 10 Aug 2023 3,510 posts	0 panad Those recipes both sound amazing! This reminds me to dig out some of my mum’s old recipe (wartime)books there’s some great recipes in those, and definitely go to show that frugal doesn’t necessarily mean lacking in any way.
